I honestly love a good smoothie – anything goes in a good smoothie and I like to incorporate smoothies into many of my clients nutrition plans – particularly those that struggle with ‘time’ in the mornings to fit in their breakfast. I personally have been on a bit of a smoothie and juicing rampage of late and thus experimenting with different flavours and varieties. I never go a day without my green juice or smoothie first thing in the morning but I have also been mixing up some different smoothies as snacks during the day which keeps my energy levels up and belly happy. I made this smoothie today inspired by a chia seed rosewater drink I had down at Heart & Soul Cafe in Byron Bay over the weekend. Here goes my version:
Rosewater, Strawberry, Coconut & Cacao Smoothie
recipe makes for 2
What You Will Need
1 thai green coconut (use the coconut meat + water)
4 strawberries
1 tablespoon rosewater
2 tablespoons chia seeds
1 teaspoon raw organic cacao nibs
What You Need To Do
Crack open your Thai Green Coconut and pour the coconut water into a blender. Then scoop out the coconut meat and put this in the blender. Place the strawberries, rosewater and chia seeds in the blender. Blend with a few cubes of ice on high speed. Sprinkle with cacao nibs.
