Well it’s technically not ‘Gelati’ as there is no dairy involved, but same same! This is one of my favourite ‘treats’ to whip up in the kitchen. So many of my clients and people I come across feel that after dinner, they are not satisfied and dare to reach for the block of chocolate or a bowl of Ben & Jerry’s Cookies & Cream Ice Cream to satisfy that sweet itch. I have reccomended this recipe to many as an alternative to sugar ridden conventional desserts. Personally I love this recipe, its so yummy. I whipped this up for some girlfriends I had over for a dinner party last Friday night as our dessert, and they loved it & couldn’t believe it was au natural and healthy. Ingredients (to make 2 servings)
1 mango
2 passionfruits
1 tablespoon extra virgin coconut oil
1 tablespoon organic dessicated coconut
Method
Blend the mango and coconut oil in a blender or use a stick mixer/food processor, until it is a creamy puree texture. Add the passionfruit pulp to the mixture but don’t blend. Scoop the puree into small porcelin ramekins (as pictured). Sprinkle with the dessicated coconut pieces. Place the ramekins into the freezer and freeze for approximately 2 hours.
You could pretty much use any fruit varieties instead of the mango – Try replacing the mango for some mixed berries, a banana or even watermelon! Oh yeah!!!
